TO ROAST YOUR SWEET POTATOES
  1. Preheat your oven to 425°.
  2. In a mixing bowl, toss the thinly sliced purple sweet potato with olive oil, salt, pepper, and 1 tablespoon of finely chopped cilantro until evenly coated. Spread the slices in a single layer on the baking sheet.
  3. Roast the sweet potatoes for 10-12 minutes or until tender and slightly crisp around the edges.
TO MAKE YOUR QUESADILLAS
  1. Lower your oven's temperature to 400º.
  2. Lay 6 mini tortillas on a baking sheet. Layer each tortilla with a light layer of mozzarella cheese, roasted sweet potato slices, avocado slices, chopped scallion, and cilantro. Top with another sprinkle of mozzarella and sandwich it closed with another tortilla. Bake for 10 minutes, or until the cheese is melted and the tortillas are lightly crisped.
  3. Arrange your quesadillas on a serving plate. Garnish with sliced scallion, a sprinkle of chopped cilantro, whole cilantro leaves, and any extra avocado.
