TO COOK YOUR PASTA
  1. Bring a large pot of salted water to a boil.
  2. Add the rotelle and egg noodles. Cook according to the package instructions until al dente.
  3. Drain the pasta.
TO MAKE THE TURKEY CREAM SAUCE
  1. In a large mixing bowl, season the ground turkey with salt, pepper, garlic powder, and onion powder.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and rosemary. Sauté until fragrant, about 1-2 minutes. Add the seasoned ground turkey and cook, breaking it up with a wooden spoon, until no longer pink, about 6-8 minutes.
  3. Add the fresh spinach to the skillet with the turkey. Stir until wilted, about 2-3 minutes.
  4. Pour in the heavy cream, mixing gently to combine. Bring to a boil and then lower to a simmer. Let simmer for 3 minutes, then add the whipped ricotta and cottage cheese. Stir until the mixture is smooth and creamy. Simmer for another 3 minutes.
  5. Add the cooked rotelle and egg noodles to the skillet with the cream sauce. Toss to coat. Simmer for 2 minutes, allowing the flavors to meld.
  6. Taste the dish and adjust the seasoning with additional garlic powder, onion powder, salt, and pepper, if needed.
