One of the most popular recipes on the Coffee And Champagne website is my Pan-Fried English Cucumbers. I’m telling you, they are some of my favorite bites. It’s been a few years now and I haven’t wavered on that. Not because they are quick and easy to make but because they are insanely delicious. With that in mind, I had the urge to make some today. Only having mini cucumbers in my fridge, I tossed these smoked paprika and feta ones together and THEY ARE INSANE! Not because they take about ten minutes to make (really, kinda less. I was being generous with the timing in the recipe) but because it feels impossible not to eat the whole batch after you take your first bite.

I highly recommend these as a starter when you have friends or family over for dinner—ooh, and for a great afternoon snack. Happiest of eating!

TO COOK YOUR CUCUMBERS
  1. Place your cucumbers cut-side-up on your cutting board. Sprinkle salt, pepper, and smoked paprika lightly and evenly over them.
  2. Coat your frying pan with 1-2 tablespoons of grapeseed oil. Heat it over high heat.
  3. One by one, lay your cucumber halves cut side down into your pan. They should sizzle when they touch the oil. Let them sit untouched until the underside has browned—about 3 minutes. Use your tongs to check them in different parts of the pan periodically to make sure you aren’t burning them.
  4. Flip all of your cucumbers over. Cook for 1 additional minute.
  5. Use your tongs to transfer your cucumbers to your paper towel-lined plate. Let sit for 2 minutes. This allows the paper towel to absorb some of the excess oil.
  6. Sprinkle feta, a small pinch of coarse sea salt, and the tiniest bit of extra smoked paprika over your cucumbers.
  7. Transfer them to your serving plate. Serve. Eat. Enjoy!
