MAPLE PEACH OVERNIGHT OATS

PEACHES AND … oats.

Ever since making my Apple And Blackberry Overnight Oats and Strawberry Mango Overnight Oats, I’ve been on an overnight oats kick. I keep getting requests from my family for, “more, more, more … when you get the chance”. I get it, they are so good and so easy to open up and eat. With my kids, it’s a speedy breakfast that is ready and waiting for them in the morning. When it comes to the adults, it’s a great afternoon pick-me-up. We all love these.

This batch was a big hit. The warmth of the maple and vanilla flavors mixed in with the summery peaches combine for the perfect dynamic purée that you’ll want to eat all by itself. Independently, the oats are sweeter than the ones in my last two overnight oats recipes. Separately from the purée, they also contain maple syrup and vanilla. The flavors in the oats and the purée are the same so when you put them together, they meld together harmoniously.

TO MAKE YOUR OVERNIGHT OATS
  1. Scoop 1/2 cup of rolled oats into each of your mason jars.
  2. Add 1/4 teaspoon of vanilla, 1/2 teaspoon of maple syrup, 1/8 teaspoon of cinnamon, and a twist of salt from your salt mill to each mason jar. Mix.
  3. Add 1/2 a cup of milk to each mason jar. Cover jars with their lids and store them in the refrigerator while you prep the purée.
TO MAKE YOUR PEACH PURÉE
  1. In your blender, combine your peaches (skin on), remaining vanilla, maple syrup, and cinnamon. Blend until you have an even and smooth purée—about 1 minute. Season with salt and blend again to incorporate it.
  2. Using a teaspoon, evenly distribute your purée over your overnight oats in each mason jar—each mason jar should get about 3 teaspoons of purée. Put their lids back on and get them back in the refrigerator for a minimum of two hours or ideally overnight.
  3. When they are ready to eat, sprinkle crushed pecans over the tops of them. Serve, eat, and enjoy!
