Simply grilled carrots are so awesome. Maple cinnamon glazed grilled carrots are so next level. It’s a dish you want to make when you want something just a little bit different from the norm. The flavor isn’t overpowering but it makes them special. Also they’re super easy to cook. It’s one of those sides you can have grilling while prepping other dishes that you can check in on every once in a while but don’t need to watch like a hawk.

TO PREP YOUR CARROTS
  1. Preheat your grill over medium heat.
  2. Place your carrots in your mixing bowl. Drizzle your olive oil over them and use your hands to rub it on so that every part of your carrot is coated.
  3. Season your carrots with salt and pepper.
TO GRILL YOUR CARROTS
  1. Using your tongs, place your carrots directly over your grill’s flames. The goal here is to char them, so as you see blackening, use your tongs to rotate your carrot to an un-charred side until all of the sides are charred—about 7 minutes.
  2. Turn off one of your burners and reduce your heat on the other to medium-low.
  3. Use your tongs to move your carrots to a part of the grill that is away from the flames. You’re looking for indirect heat here. Close the grill.
  4. Let each of your carrots cook until you can easily insert and remove your paring knife from the center of its thickest part—roughly 20-25 minutes. Check in on them every 5 minutes or so in case they need rotating. Your carrots won’t all cook at the same rate. Such is the grilling experience. So make sure to test each carrot individually.
  5. WHILE YOUR CARROTS ARE COOKING, mix your maple syrup and cinnamon together in your small bowl.
  6. When your carrots are about a minute shy of being finished cooking (doesn’t need to be super precise), use your silicone brush to brush your maple cinnamon mixture over your carrots. Use your tongs to rotate them and then coat the uncoated part. Let sit on the grill for one minute.
  7. Use your tongs to transfer your carrots to your plate and enjoy them!
