GRILLED SHRIMP make for the perfect easy summer grilled dinner

As someone who lives in a city apartment, I don’t often grill. I do come up with creative ways to make dishes that feel like they’ve come off of a grill but when presented with an actual grill at my family’s Hampton’s house, oh, I got super excited (like too excited. Picture one of those 1950’s ads of women being excited over a new vacuum—that’s me right now).

I made this dish the other night and love how simple and delicious it is. The combination of a char with a buttery wine sauce should be experienced by all. Check out the video in the second slide of my Instagram post, here.

WHITE WINE BUTTER AND HERB GRILLED SHRIMP

Ingredients

FOR THE WHITE WINE BUTTER SAUCE

Instructions

TO MAKE YOUR WHITE WINE BUTTER SAUCE
  1. In your saucepan, over medium heat, melt your butter in your saucepan
  2. Add garlic. Using your wooden spoon, mix your garlic consistently to draw its flavors while keeping it from burning—about 3 minutes.
  3. Add olive oil, tarragon, oregano, and cilantro. Mix it all together. Let simmer for 2 minutes.
  4. Add chardonnay and lemon juice. Simmer for 10 minutes.
  5. Season to taste with salt and pepper.
TO COOK YOUR SHRIMP
  1. Preheat your grill to medium-high heat.
  2. Put your shrimp in your mixing bowl.
  3. Season it with salt and pepper.
  4. Scoop half of your white wine butter mixture onto your shrimp. Toss your shrimp in the mixture to fully coat them.
  5. Lay your shrimp flat in your grill basket. Do not overlap them, it will cause them to cook unevenly.
  6. Cook your shrimp until fully cooked with a little charring flipping half way through the cook—I did about 3 minutes on the first side and then an additional 2 on the other.
  7. Remove from grill.
TO PUT YOUR DISH TOGETHER
  1. Scoop your remaining white wine butter sauce into a shallow bowl or high rimmed plate (see the one I used in my photos as an ideal option).
  2. Place your shrimp into a flat layer in the sauce.
  3. Sprinkle parmesan flakes over your shrimp. I crumbled my flakes so they were smaller pieces mostly for my personal aesthetic reasons.
  4. Serve hot.
