Instructions

TO PREPARE THE DALGONA WHIPPED TOPPING
  1. In the bowl of a stand mixer outfitted with the whisk attachment, combine the instant coffee granules and granulated sugar.
  2. Pour the boiling water over the mixture, allowing the granules and sugar to dissolve.
  3. Whisk the mixture on high speed for about 7 minutes, or until it becomes light, fluffy, and forms stiff peaks.
TO PREPARE THE COCKTAIL
  1. In a cocktail shaker, combine whiskey, cooled espresso, and simple syrup.
  2. Add a pinch of cinnamon and cardamom for a warm, aromatic kick.
  3. Add ice cubes to the shaker and shake vigorously until the mixture is well-chilled.
TO ASSEMBLE & GARNISH THE COCKTAIL
  1. Strain the cocktail into a coupe glass.
  2. Gently spoon the prepared Dalgona whip over the top of the cocktail, creating a generous, cloud-like layer.
  3. Finish with a sprinkle of shaved dark chocolate over the Dalgona whip.
