TO PREP YOUR TRUMPET MUSHROOMS
  1. On your cutting board, use your chefs knife to cut your mushrooms in half lengthwise.
  2. One at a time, hold each half of your mushrooms in your hand cut side up. Use your paring knife to cut a diagonal grid along the length of your mushroom’s stem. It should be between 1/4 and 1/2 way deep into the mushroom—not soooo deep that it ruins the form of your mushroom.
TO PREP YOUR SAUCE
  1. In your mixing bowl, combine your tamari, rice vinegar, light brown sugar, cinnamon, minced garlic, salt and pepper. Whisk it all together.
TO COOK YOUR MUSHROOMS
  1. Over medium-high heat, heat your grapeseed oil in your pan.
  2. When hot, add your mushrooms, cut side down. You will know it’s hot enough when the mushrooms sizzle slightly upon hitting the pan.
  3. Sear until the side touching your pan is a golden color—roughly 5 minutes.
  4. Flip them.
  5. Pour your sauce over your mushrooms. Lower your heat to a simmer
  6. Season with salt and pepper.
  7. Add mission figs.
  8. Cook till your mushrooms are soft—roughly 5 minutes.
  9. Transfer your mushrooms to a plate and sprinkle chives, sesame seeds, and parmesan over them.
  10. Eat and enjoy!
