HEART-SHAPED PARMESAN POTATO STACKS

HEART POTATOES … this one goes out to all my potato lovers out there.

Love is in the air—and also in your muffin tin. These heart-shaped potato stacks are crispy, cheesy, and packed with garlicky, buttery goodness. With layers of thinly sliced potatoes, melty Parmesan, and fresh herbs, they’re the perfect side dish for date night, Valentine’s Day, or any time you want to feel extra loved. Bonus: they’re super easy to make, but they look like you spent hours in the kitchen. Obsessed!

Instructions

TO MAKE YOUR POTATO HEART STACKS
  1. Preheat the oven to 375°F. Lightly grease a muffin tin.
  2. Using a mandolin, slice the Russet Potatoes into rounds between 1/8 and 1/4 inch thick. Using a heart-shaped cookie cutter, cut out hearts from each potato slice.
  3. In a mixing bowl, toss the potato hearts with melted butter, parmesan, garlic, chopped Italian parsley, kosher salt, and black pepper until evenly coated.
  4. Stack three potato hearts in each muffin tin cup.
  5. Using a microplane, finely grate extra parmesan over each stack.
  6. Bake until the potatoes are golden brown and crispy around the edges—25-30 minutes.
  7. Remove from the oven and garnish with ripped Italian parsley leaves and a sprinkle of finishing salt.
  8. Serve warm and enjoy!
