These yams are roasted until golden, tossed in olive oil, salt, and pepper, and then topped with a crisp, caramelized brûlée crust. They’re the perfect mix of savory and sweet, with a texture that’s tender inside and satisfyingly crackly on top. All you need is a handful of ingredients, a little roasting time, and a quick brûlée moment to make these yams fire!

TO ROAST YOUR YAMS
  1. Preheat your oven to 400°F.
  2. Slice the yams into even ½-inch rounds, leaving the skin on for added texture and flavor.
  3. In a large mixing bowl, toss the yam slices with olive oil, salt, and pepper until they are evenly coated.
  4. Spread the yam slices in a single layer on a foil-lined baking sheet.
  5. Roast the yams in the oven for 25 minutes, until tender enough to stick a steak knife into and then pull out easily.
TO BRÛLÉE YOUR YAMS
  1. Remove the yams from the oven and let them cool for about 5 minutes.
  2. Sprinkle a thin, even layer of granulated sugar over the top of each slice.
  3. Use a kitchen torch to caramelize the sugar on each slice. To avoid burning, move the torch in small circles about 6 inches above your sugar.
  4. Let the yams cool for 2 minutes so that the caramelized sugar hardens into a crisp layer.
  5. Serve warm and enjoy!

Notes

For the best outcome, brûlée your yams right before you serve them.
