DEVILS ON HORSEBACK JUST LEVELED UP! Who would have thought it possible?

If you’re looking for a no-brainer win of a recipe that leaves you with the perfect bite to pair with wine, you’ve just found it. And they’re so pretty! It had to be said because, honestly, they are traditionally kinda—who am I kidding—super gross looking. The only reason they still exist is because they are crazy crazy crazy next level delicious. We wanted the best of both worlds—beautiful and delicious—in my house and then one brilliant day, my husband Franklin had a stroke of genius. These are what happened next.

PS. Yes the bacon can be substituted for turkey bacon. See the turkey bacon version on the white plates below.

BACON WRAPPED DATES

TO STUFF YOUR DATES
  1. Preheat your oven to 400º.
  2. On your cutting board, cut dates ALMOST fully in half but not all of the way through—like a hotdog bun. Discard the pits.
  3. Place a marcona almond inside of the date where the pit used to be.
  4. Fill the rest of the space inside of the date with crumbled gorgonzola.
  5. Press the dates closed around the cheese stuffed center.
TO WRAP YOUR DOUBLE DATES
  1. On a clean surface, lay a piece of bacon in front of you horizontally.
  2. Place one date across each end of your bacon strip (you should now have two dates sitting on your strip of bacon).
  3. Rolling from both ends, like a scroll, wrap both of your dates in bacon until they meet in the center.
  4. Stick a skewer through one side of your first bacon wrapped date and out of the other side of the second one.
  5. Repeat this process until all of your dates are wrapped and skewered. And, yes you can put as many wrapped dates on the same skewer as will fit.
TO BAKE YOUR BACON WRAPPED DATES
  1. Lay your skewers side by side on your Silpat lined baking sheet.
  2. Bake for 12 minutes (you should see some blackening). Then flip the skewers and bake for another 12 minutes on the other side.
