APPLE AND BLACKBERRY OVERNIGHT OATS

NOW, IT’S A GOOD MORNING … I love what a little planning ahead can do.

It’s the mom in me—well, hmmm—perhaps it’s the fact that I’ve always been hyper-organized … either way, when it comes to mornings, I like to have everything and everyone in order. Anytime I can give my future self a leg up in an easy way that also spreads an incredible aroma around my home, I’m game. Enter these overnight oats.

The oats part is effortless. You simply mix a 1:1 ratio of oats and a milk of your choosing. Refrigerate. Done. It’s the topping that makes it special. Allow me to embellish. My brother Noah recently visited me from The North Fork of Long Island. In tow, he had these gorgeous blackberries from Andrew’s Family Farms which my whole family immediately started gobbling up the second they landed on my counter. You know I had to stash it away if I wanted any for breakfast BUT THERE WERE ONLY SIX LEFT—challenge accepted! For the purée on top of these overnight oats, I cooked down those precious remaining blackberries with finely diced apples, cinnamon, nutmeg, and brown sugar. It’s the perfect balance of sweetness for this breakfast. This apple and blackberry purée is really a special topping that will start your mornings on the perfect foot. TO MAKE YOUR OVERNIGHT OATS
  1. Scoop 1/2 cup of rolled oats into each of your mason jars.
  2. Add 1/2 a cup of the milk of your choosing to each mason jar. Cover your jars with their lids and store them in the refrigerator for now.
TO MAKE YOUR APPLE BLACKBERRY PURÉE
  1. In your frying pan, over medium-high heat, melt down your butter. Add in your nutmeg, cinnamon stick, and salt. Mix together.
  2. Add apples and blackberries. Mix them until your apples are fully and evenly tinted red from the blackberries.
  3. Add in 3/4 cup of water. Mix. Turn up your heat to high and bring your water to a boil. Then, cover your frying pan and lower your heat to a high simmer. Let simmer until most of your water is gone—about 20 minutes.
  4. Remove from heat and let cool for 5 minutes.
  5. Transfer your apple blackberry mixture to your blender. Add your remaining 1/2 cup of water. Blend until you have an even and smooth purée—about 1 minute.
  6. Using a teaspoon, evenly distribute your purée over your overnight oats in each mason jar—each mason jar should get about 2 1/2 teaspoons of purée. Put their lids back on and get them back in the refrigerator for a minimum of two hours or ideally overnight.
  7. OPTIONAL. When they are ready to eat, sprinkle crushed pecans over the top. Serve, eat, and enjoy!
