Full transparency, this recipe came to be in a moment of urgency. I was headed away for a couple of days and wanted an extra food option for my son. What started as a dish I had zero plans to write about quickly turned into a must dish. And, here we are. I’m pretty sure we’ve split this dish evenly at this point satiating both my inner child and my outer one (wink, wink).

Ingredients

Instructions

TO MAKE YOUR PASTA
  1. Fill your stockpot with water, heavily season it with salt, and over high heat bring it to a boil.
  2. Add your pasta and cook it to the package’s instructions for al dente pasta. Mine took 11 minutes.
  3. Move on to the next steps while your pasta is cooking. When it is finished, strain your pasta into you sink and set it aside.
TO MAKE YOUR GROUND TURKEY
  1. In your mixing bowl, use your hand to mush together your ground turkey, thyme, chive, garlic powder, onion powder, salt, and pepper until you have an even mixture. Don’t worry about being too precise with your seasonings here. When the turkey is fully cooked you can season it to taste.
  2. In your frying pan, heat your olive oil.
  3. Add in your ground turkey mixture and break it up with your rubber spatula until it feels like a crumble.
  4. Let cook, stirring occasionally, until the turkey is browned—about 15 minutes.
  5. Move on to the next step while this is cooking.
TO MAKE YOUR CHEESE SAUCE
  1. In your saucepan, over moderately high heat, melt your butter.
  2. Whisk in your milk.
  3. Whisk in your parmesan, goat cheese, and mustard.
  4. Season to taste with salt and pepper. To taste, take a small spoon full and blow till cool enough to taste before tasting.
  5. Over medium-high heat, let simmer until your mixture reduces about a third—about 10 minutes.
TO COMBINE ALL OF YOUR INGREDIENTS
  1. Put your strained pasta back in the stock pot.
  2. Pour your cheese sauce over your pasta. Mix it together until your pasta is fully coated with your cheese sauce.
  3. In batches mix your ground turkey in until it’s fully and evenly combined.
  4. Season to taste with salt and pepper.
