Warm Cucumber Avocado And Halloumi Side Salad

I’m telling you, warm cucumbers are a flavor revelation. Add creamy avocado and golden, crispy halloumi—now we’ve taken this dish to the next level. There’s something about the smoky paprika, garlic, and that perfectly seared halloumi sizzle that is seriously addictive. Honestly, it couldn’t be simpler, and it’s so perfect for when friends swing by or when you just need a quick, cozy side dish. It’s light, flavorful, and gone before you know it! Enjoy every bite.

WARM CUCUMBER AVOCADO AND HALLOUMI SIDE SALAD

TO COOK YOUR CUCUMBERS
  1. In a medium mixing bowl, toss your cucumber chunks with 1 tablespoon of olive oil, salt, pepper, garlic powder, and smoked paprika.
  2. In a large skillet over medium heat, heat 1 tablespoon of cooking olive oil.
  3. Once the oil is hot, add in the cucumbers. WARNING! The cucumbers will sizzle dramatically when the water in them touches the hot oil. If you need to lower your heat or move the skillet from the heat for a moment, go for it. Just know it's all normal. Sauté the cucumbers, stirring occasionally, until they’re softened but still slightly firm, about 4-5 minutes.
  4. Remove the cucumbers from the skillet and set them aside to cool slightly.
TO PAN-SEAR YOUR HALLOUMI
  1. Clean out your skillet, and wipe it dry.
  2. Heat 1 tablespoon of cooking olive oil.
  3. Place the halloumi cubes in the skillet in a single layer. Lightly sprinkle pepper over it. (NO SALT, halloumi is salty enough.) Sear the halloumi on one side until golden brown, about 2-3 minutes, then flip and cook the other side until golden.
  4. Remove the halloumi from the skillet and set aside.
PUT IT ALL TOGETHER
  1. Season your avocado chunks with salt and pepper.
  2. In your mixing bowl, gently combine the cooked cucumbers, seared halloumi, avocado chunks, and feta.
  3. Sprinkle a little extra smoked paprika, salt, and pepper to your taste.
  4. Serve the dish warm or at room temperature as a flavorful side. Enjoy!
