TURKEY PATTIES FTW! The flavors here are incredible.

I LOVE WHEN MY HUSBAND COOKS! He went to culinary school, so you can bet I’m always happy to kick back and do my own thing while he takes over the kitchen. Today’s happy surprise was turkey sausage breakfast sandwiches. I knew they’d be awesome (yes, I’m that confident in his cooking) so I wrote down what he was doing while he was doing it, and snapped some pictures before we inhaled, well, all of it. So hope you enjoy these as much as we did! Happy breakfast!

TURKEY SAUSAGE

TO MAKE YOUR TURKEY SAUSAGE
  1. Preheat your oven to 400º.
  2. Put your ground turkey in your mixing bowl.
  3. Season it with your salt, pepper, thyme, garlic, fennel, clove, smoked paprika, onion, sage, and cayenne.
  4. Use your hands to combine it until it is evenly mixed.
  5. Use your food scale to measure out 2 oz chunks. Then roll each chunk into a ball and then flatten it into a disc.
  6. Place your discs on your silpat lined baking sheet.
  7. Bake until when you test with the meat thermometer it reads 155º—about 12 minutes (fully cooked is technically 165º but when you take them out of the oven they will continue to cook so taking them out early keeps them from drying out).
  8. That’s it!

Notes

TO MAKE THE SANDWICH IN THE PHOTO ABOVE: toast a potato bun, layer a slice of American cheese on the toasted bun when it’s super hot, fry and egg and layer it on, stick your turkey sausage on top, put the top of your bun on top and you’ve got it!
