TURKEY AND SWEET POTATO SHEPHERD'S PIE

DON’T LET DINNER BE “JUST ANOTHER GROUND TURKEY RECIPE”, make it awesome!

This isn’t your classic Shepherd’s Pie. Typically, you’ll find that a Shepherd’s Pie uses red meat, peas, carrots, and a white potato topping. Inspired by the classic, I came up with this fun twist. With a ground turkey base, mushrooms, butter beans, and a sweet potato topping, I’m so loving this! Sending love your way!

Ingredients

TO MAKE YOUR SWEET POTATOES
  1. Put your sweet potato chunks in your saucepan with about an inch of water. Cover with the lid and turn the heat to medium. Steam till softened—about 10 minutes.
  2. Remove the lid, and use your potato masher to mash your potatoes.
  3. Mix in your butter, salt, and pepper.
TO MAKE YOUR TURKEY FILLING
  1. Preheat your oven to 400º.
  2. Coat your frying pan with your canola oil and heat it over medium-high heat.
  3. Once your oil is hot, add in your onion slices and garlic and move them around consistently with your spatula until softened—about 3 minutes. To test if your oil is hot, drop a piece of onion into it, when it sizzles, it’s ready.
  4. Rip off pieces of your ground turkey and add it into your frying pan. Use your rubber spatula to break it down further.
  5. Season your turkey with salt, pepper, oregano, and thyme.
  6. Turn your heat to high and stir occasionally until you begin to see the edges of your turkey become a golden brown—about 15 minutes. At 10 minutes in, pour your bourbon over your turkey mixture.
  7. Add your mushrooms, butter beans, and chicken stock. Cook down for another 3 minutes.
  8. Sprinkle flour over your entire mixture. Mix it in fully.
TO PUT IT ALL TOGETHER
  1. Use your rubber spatula to flatten out your turkey mixture.
  2. Scoop your mashed sweet potato on top of your turkey mixture (still in the frying pan). Use your rubber spatula to smooth it out.
  3. Optional: sprinkle cinnamon over your sweet potato.
  4. Put it in the oven and bake for 25 minutes.
  5. Scoop and serve.
