TOMATO BASIL BREAD

EASY TOMATO BREAD … oh, it’s good!

My family goes through phases of needing a loaf of bread on the counter. We basically live in a way where we overload on bread and then need a bread detox. This is the latest bread I came up with and we all love it. It has that perfect balance of savory and sweet. It feels like bread you would buy at a farm stand on the side of the road in the North Fork.

TO MAKE YOUR TOMATO BASIL BREAD
  1. Preheat your oven to 350°.
  2. In your blender, purée your tomatoes and basil until a smooth even juice. Add your eggs and blend until they are fully incorporated. Pour your mixture into your mixing bowl.
  3. Whisk your sugar into your tomato mixture
  4. Add your flour and baking soda and season with salt and pepper. Mix them in fully.
  5. Spray the inside of your loaf pan with your baking spray.
  6. Pour your batter into it.
  7. Evenly place your tomatoes on top. FYI, they will sink to the middle of your loaf when baking.
  8. Sprinkle your remaining basil over your loaf and season lightly with salt and pepper.
  9. Bake until you have a light golden color and can stick a toothpick into the center of the loaf and only crumbs (no uncooked batter) come out on it—1 hour and 5 minutes.
  10. Transfer to your cooling rack and let cool.
  11. Slice, eat, and enjoy!
