LUNCH BOX FRIENDLY ENERGY BALLS aka, they are nut free.

This one goes out to my older son Sutton who loves energy balls as much as I do. Wanting to be able to send them along to school with him, I had to create a nut free version that didn’t, well, suck. These are awesome! I’ve been gobbling them down while he’s at school which I am totally and completely aware of defeats the purpose of me making them—I simply can’t help myself.

Instructions

TO MAKE YOUR ENERGY BALLS
  1. In your food processor, blend down your oats until they become a flour consistency.
  2. Add your sunflower butter, agave, dried cranberries, cinnamon, and vanilla. Blend until you have a thick even mixture.
  3. Carefully remove the blade from your food processor and using your rubber spatula fold in your dark chocolate.
  4. Use your ice cream scoop to portion out each ball. Use your hands to roll each one into a ball.
  5. Store your balls in a storage container.
  6. Refrigerate what you don’t eat immediately.
