SPINACH AND GOAT CHEESE MINI TURKEY BURGER PATTIE

TURKEY BURGER NIGHT … made on the stovetop!

I’m a sucker for an apartment-friendly burger, one that I can mix together in a bowl, form into patties and pan-sear. It makes my weekdays easy. Last week, I made my Mini Beef Burger Patties and the family loved them so much that this week I figured I’d make these turkey ones. Yes, I stuffed them with spinach. I don’t lie to my kids about it either. A week or so ago, I tried giving them delicious cooked-down spinach (sans the garlic featured in that recipe I linked to) and they just couldn’t enjoy the spinach straight. So I ate it all and told them that I’d tuck it in their food next time. This is what I came up with and they knowingly devour these, spinach and all. Feels like a mom win! So for kids and adults alike, sandwich them into a bun for the Super Bowl, Fourth Of July, and burger night, or eat them straight. They’re always a win!

TO MIX YOUR TURKEYBURGER MEAT
  1. In your large mixing bowl, combine your turkey, salt, pepper, garlic powder, and onion powder until it's evenly mixed.
  2. Add your rosemary, dill, spinach, goat cheese, and parmesan. Use your hands or a rubber spatula to mix it all until your ingredients are evenly integrated into the turkey.
  3. Using your food scale, divide your turkey mixture into 8 2.25 ounce portions.
  4. Use your round cookie cutter as a guide. One at a time, place your portions into the cookie cutter. Use your fingertips to fill the shape of the circle. This will allow you to have evenly sized burgers.
  5. Sprinkle a little extra salt over the tops of your burger patties.
TO COOK YOUR BURGERS
  1. Add your grapeseed oil to your cast iron skillet. Heat over high heat.
  2. Test the heat of your oil by touching it with the edge of one burger patty, it should sizzle immediately. If it doesn't, your oil isn't hot enough. Give it a little more time to heat. When your oil is ready, place half of your burger patties in. Sear until your meat isn't sticking to the skillet and it has some golden browning—about 2 minutes.
  3. Use your metal spatula to flip your turkey burger patties. Cook until you have an internal temperature of about 145º—about another 2 minutes. Cover your frying pan. Turn your heat to medium. Cook until you have an internal temperature of 165º. Use your spatula to transfer to a plate to rest. Repeat this process for your remaining uncooked burger patties.
  4. Let your turkey burgers rest for at least 5 minutes before eating.
  5. Serve as is or place on a slider bun with your favorite toppings. Eat. Enjoy!
