Growing up I dreaded Passover. Now, dare I say, I kinda look forward to it. Yes, the food is different but that doesn’t mean it has to be bad. Enter this recipe. One, I’m really excited about how easy it is to make—it takes about the same amount of effort as making a sandwich and yields such a fun outcome. It also makes for a fantastic holiday gift. Simply putting a piece or two in a little plastic bag and passing it to a friend will surely make them feel extra special.

TO MAKE YOUR ROCKY ROAD CHOCOLATE COVERED MATZO
  1. Lay your foil down on your counter and place your cooling rack over it. Place your 2 pieces of matzo on top of it.
  2. Pour your chocolate chips into your mixing bowl and microwave them to melt them.
  3. HOW TO MELT YOUR CHOCOLATE IN THE MICROWAVE.
  4. Place your bowl filled with chocolate chips in the microwave.
  5. Set your microwave to go for 2 minutes. You will need to open your microwave every 20 seconds to mix your chocolate with your rubber spatula. The first couple of times you mix you won’t see much melting but by mixing you will be evenly distributing the heat.
  6. Continue this process until your chocolate is ALMOST fully melted aside from a few visible chips—this took me 1 minute and 40 seconds.
  7. Take your bowl out of the microwave and continue to mix until you have smooth and even chocolate—this only takes a few seconds.
  8. Use your rubber spatula to spread a thick even coat of chocolate over the tops of both of your pieces of matzo. You should only have a little chocolate left in your bowl. This is perfect, you will use it for your drizzle.
  9. While your chocolate is still wet, one-by-one place your almonds and then marshmallows into it—it’s nice to have them evenly dispersed.
  10. Drizzle chocolate over the top of your matzos by dipping the tines of your fork into your remaining chocolate in your bowl and waving it back and forth roughly 4 inches above your chocolate until you have covered the matzos to your liking.
  11. Let your chocolate fully cool to room temperature—roughly 2 hours.
  12. Transfer your matzos to your cutting board and cut each piece into quarters.
