FYI. Pizza dough is really easy to make, it just takes a little time to sit before it’s ready to use. So, don’t be intimidated! Just dive in and don’t over think it. Pizza night is going to be awesome (I know this because it always is!

TO MAKE YOUR PIZZA DOUGH
  1. In your stand mixer, combine your flour, yeast, salt, and sugar.
  2. While the stand mixer it mixing, pour in your water and 1 tablespoon of olive oil.
  3. Mix until a dough has formed—about 2 minutes.
  4. Lightly dust a clean surface (like your counter) with your flour.
  5. Place your dough on your counter and use your hands to work it into a ball (no need to overwork it here)
  6. Use your remaining olive oil to coat your mixing bowl.
  7. Place your dough ball in the middle of the bowl. Cover the top of your bowl with your plastic wrap.
  8. Store your dough in a warm dark place for 1 hour. If you have an oven like mine that has a “proof” setting, use that!
  9. Lightly dust your clean surface with flour again.
  10. Place your dough on the floured surface and cover it with your hand towel. Let it rest for 5 minutes. If you’re trying to make two small personal pizzas, or lots of pizza bites, cut your dough into the appropriate amount of pieces before covering it to let it rest.
  11. Use your fingers to press the dough into discs (or shape of your choosing).
