SHEET TRAY CARROTS … can veggies be any easier?

I love carrots as a side dish or mixed into my salads and bowls. This is a great basic recipe that doesn’t take a lot of effort. You’ll love.

Mix it up! Add more of my carrot recipes into your easy dinner sides repertoire. Honey Glazed Carrots, Maple Glazed Carrots, and Sugar Carrots. I love them all.

PARSLEY SHEET TRAY CARROTS

TO MAKE YOUR CARROTS
  1. Preheat your oven to 425º.
  2. Cut your carrots in half widthwise and then cut each of those in half lengthwise.
  3. Place all of your carrots on your baking sheet.
  4. Drizzle olive oil over them.
  5. Season with salt and pepper to taste. (You can always add more to taste after they have baked)
  6. Sprinkle your parsley over your carrots. Use your hands to toss them all together.
  7. Bake for 30 minutes. Taste test for texture. If your carrots feel too hard still, try baking for another five minutes.
  8. Taste and add extra salt and pepper to your liking.
  9. Serve hot and enjoy.
