PAN-SEARED HALLOUMI PEACH AND CORN SALAD

HALLOUMI SALAD. The corn side dish you need on your menu.

To make life a little more effortless, I often keep frozen vegetables in my freezer. Pop them in the microwave and, voila, an easy side. Well, I used that bag of frozen corn that I’m referring to, dumped it on a baking sheet, and broiled it for 20 minutes. In that time, I quickly pan-roasted halloumi and chopped my peach, mint, and pistachio. Toss it all together and now you really have the perfect side.

Honestly, after making this easy dish, I have the itch to elevate more of my frozen veggies. Stay tuned!

TO MAKE YOUR SALAD
  1. Spread your frozen corn in an even layer on your baking sheet. Broil on high until you have light browning on some of your corn kernels—about 20 minutes.
  2. In the meantime, warm your frying pan and place your cut halloumi pieces on it. Cook until the bottom side of them is golden—about 2-3 minutes. Flip and repeat. If they produce too much liquid, pour it out or it will slow the cooking process. Then remove them from the heat.
  3. In your mixing bowl, combine your roasted corn, seared halloumi, peaches, mint, and pistachios. Mix until they are fully integrated.
  4. Taste. Season with salt and pepper to your liking.
  5. Serve. Eat. Enjoy.
