PUMPKIN GLAZED CHICKEN … if you don’t know, now you know!

I had never heard of pumpkin-glazed chicken. In all of my research, I couldn’t find a single recipe for it. So, I decided to make it. It’s incredible! I love that it’s seasonal but it goes far beyond that. The chicken is incredibly moist and because the glaze incorporates pumpkin purée, butter, and maple syrup there is a dynamic richness to the flavor that makes you want to rush back for your next bite time and time again, until … you look down and your plate is empty.

TO MAKE YOUR MAPLE PUMPKIN BUTTER GLAZE
  1. Pre-heat your oven to 425º
  2. In your saucepan, over medium heat, whisk together your pumpkin purée, maple syrup, ginger, nutmeg, and cinnamon stick until evenly incorporated and warm—about 3 minutes.
  3. Whisk in your butter until fully incorporated.
  4. Remove from heat.
TO MAKE YOUR CHICKEN
  1. Line your baking sheet with foil.
  2. Use your paper towel to thoroughly dry your chicken.
  3. Season both sides of your chicken with salt and pepper. Pat it in.
  4. Use your silicone brush to coat your chicken in a layer of maple pumpkin butter glaze.
  5. Gently brush on a layer of your extra virgin olive oil.
  6. Bake for 15 minutes.
  7. Brush on the rest of your maple pumpkin butter glaze.
  8. Bake for 10 more minutes or until your meat thermometer reads 165/170º.
  9. Let your chicken sit for 5 minutes before serving. This will allow it to get extra juicy.
