Mini noodle kugel bites—I can’t believe I was this many years old before I had this idea! They are such a fun, playful twist on a Jewish holiday classic, now in perfectly poppable portions! They are creamy, sweet noodle morsels baked to golden perfection, making them an ideal addition to your Festival of Lights celebrations. Great as an appetizer or side dish, these kugel bites fit seamlessly into every Jewish holiday menu.

TO MAKE YOUR KUGEL BITES
  1. Preheat the oven to 350º.
  2. Fill your stock pot with water, season liberally with salt, and bring it to a boil. Add pasta and cook to al dente—mine took 4 minutes. Strain and run cold water over your noodles to stop them from cooking/softening further.
  3. Grease the mini muffin tin with non-stick cooking spray. Set aside.
  4. In a large mixing bowl, whisk together the cottage cheese, sour cream, sugar, melted butter, beaten eggs, vanilla extract, ground cinnamon, and salt. Mix until well combined. There will still be some pieces of cottage cheese in there but the rest should look very smooth and even.
  5. Fold the egg noodles into the mixture until evenly coated.
  6. Spoon the noodle mixture into the prepared mini muffin cups, filling each to the top and pressing down gently to compact.
  7. Sprinkle additional cinnamon over the tops of your kugel bites.
  8. Bake until the tops are golden brown and a toothpick inserted into the center comes out clean—about 25-28 minutes.
  9. Allow the kugel bites to cool in the tin for about 10 minutes before removing. Use a butter knife to dislodge each one. Serve warm or at room temperature.
