I love a great café. Living on the Upper East Side of Manhattan, I have a few favorites I love going to. Usually, the decision is made based on what I’m in the mood to eat. When I make my way to Black Star Bakery, I’m crossing my fingers and praying that they have their energy balls that day. Such a win when they do. Now, confession, I don’t make these all the time because they are wayyyy too addicting. They cannot exist in my house because they won’t exist in my house ... if you catch my drift. Please, don’t say I didn’t warn you!

HONEY PEANUT BUTTER CHOCOLATE CHIP ENERGY BALLS

Instructions

TO MAKE YOUR ENERGY BALLS
  1. In your food processor, blend down your oats until they become a flour consistency.
  2. Add your almonds and pulse until they are broken down but not crumbled.
  3. Add your honey peanut butter, agave, figs, cinnamon, and vanilla. Blend until you have a thick even mixture.
  4. Remove the blade from your food processor OR transfer your mixture into a mixing bowl.
  5. Use your rubber spatula to fold in your chocolate morsels.
  6. Use your ice cream scoop to measure evenly packed portions. Roll each into a ball.
  7. Store your balls in an air tight storage container.
  8. Refrigerate what you don’t eat immediately.
