GLUTEN-FREE SPAGHETTI that everyone will love.

As someone who is not gluten intolerant, I don’t find myself making it all that often. That said, whenever I have a friend with special dietary needs, I’m always up for the challenge. When sitting and planning this dish, I decided that a super rich sauce would balance the pasta. My friends, I’m here to tell you that no one noticed it was a gluten-free dish! In my book, that’s the real win.

GLUTEN-FREE SPAGHETTI WITH HERB ALFREDO SAUCE

TO MAKE YOUR PASTA
  1. Over high heat, bring 4 quarts of salted water to a rolling boil in your stock pot. Add your gluten-free spaghetti and cook according to your package's instructions. Strain. Run cold water over your spaghetti to stop it from cooking. Set aside.
TO MAKE YOUR ALFREDO SAUCE
  1. Over medium-high heat, heat 1 tablespoon of olive oil in your now empty stock pot.
  2. Add shallots. Cook down while stirring consistently until they have softened and slightly yellowed—about 2 minutes.
  3. Add butter and continue to mix until it is fully melted.
  4. Add heavy cream. Season with salt and pepper. Mix until it's all fully integrated. Simmer for 10 minutes.
  5. Add your parmesan cheese, rosemary, sage, and thyme. Mix until your cheese is fully melted and all of your herbs are fully and evenly integrated.
  6. Add salt and pepper to your liking.
  7. Add your strained spaghetti and use your wooden spoon to fold it all together until you have an even mixture.
  8. Serve. Eat. Enjoy!
