EASTER CARROT YOGURT COVERED PRETZELS

CARROT PRETZELS, it’s what’s up, Doc.

I want to say “when I think about Easter” but if I’m being honest, the Jew in me doesn’t really think about Easter, like ever. That said, I had this moment where I was in a store and saw all of these cute egg and rabbit treats and it got me to really thinking about what we identify as “Easter-y”. Carrots really stuck with me. I think it’s because I eat carrots so regularly but then the plays on candy carrots adhered themselves to my brain.

I don’t often play with food coloring, but it’s really fun. A pretzel lover, I put those thoughts together and landed on yogurt covered pretzels that look like carrots. I’d never really made yogurt covered anything before researching for this recipe and FYI there is a lot of sugar used to yogurt cover. I was surprised but then again, it’s for a celebration, so who doesn’t love a little sweetness? Have fun and enjoy these!

EASTER CARROT YOGURT COVERED PRETZELS

TO MAKE YOUR ORANGE AND GREEN YOGURT
  1. In your stand mixer, combine your yogurt and confectioners sugar. Over low speed (trust me you want to start at low speed or your sugar will fly EVERYWHERE), mix them together until you have a smooth even mixture—about 1 minute. You can always turn up the speed once it starts coming together.
  2. Divide your yogurt sugar mixture. Transfer 2/3rds of your mixture into your mixing bowl and leave the last 1/3rd in your stand mixer.
  3. Add your yellow and red food coloring to your 2/3rds portion in your mixing bowl. Use your wisk to mix it all together until you have an even orange color. If you find that it’s not the perfect shade of orange for you, add a little more of the red or yellow until it feels right—I recommend one drop at a time because the color can change pretty quickly on you.
  4. Add your green food coloring to the remaining 1/3rd of your mixture in your stand mixture. Mix until it is evenly incorporated.
TO COAT YOUR PRETZEL RODS
  1. Clear out space in your freezer.
  2. Line your baking sheet with your parchment paper and then place your cooling rack on top of it.
  3. Pour your orange mixture into your tall cup (you want it to be high enough to coat 3/4 of your pretzel rods)
  4. One by one, dip each pretzel stick into your orange mixture, give it a little twirl to make sure it’s fully coated, and then lay it flat on top of your cooling rack. Don’t worry if you can still see through the orange, we have a few coats to go!
  5. Designate one tablespoon to each color mixture. Use your spoon for the green yogurt mixture and spoon some of it over the raw end of your pretzel stick until that end feels fully coated. Again, it will be a little sheer but don’t worry we have more coats to go.
  6. Freeze for 15 minutes and then use your spoons to scoop on another coat. Repeat this feezing and coating process until you have run out of your yogurt mixture (or it feels covered enough to you).
  7. Freeze for at least 2 hours though overnight is preferred.
  8. Use a metal spatula to gently separate your pretzel sticks from the cooling rack.
  9. And, you’re done! Enjoy this fun Easter treat!
