WHAT TO MAKE WITH YOUR CANNED CHICKPEAS—vegetable fritters!!

I LOVE CHICKPEAS! There is always at least a can of them in my pantry. I’m the girl who would be happy eating them straight from the can but there is so much more that can be done with them. These crispy chickpea bites make for such a great healthy appetizer or snack—OBSESSED! And it takes such a little amount of time, it’s almost ridiculous. I blocked off way too much time in my day to make these, HA! What a great win!

TO MAKE YOUR CHICKPEA FRITTERS “DOUGH”
  1. In your food processor, combine your chickpeas, garlic, chives, lemon juice, onion powder, red pepper flakes, salt, and pepper.
  2. Blend until crumbly—about 30 seconds.
  3. Transfer your chickpea mixture to your mixing bowl.
  4. Taste your mixture and add more of any of the seasonings you’ve already added to taste.
  5. Add mayonnaise, egg, and flour. Use your rubber spatula to fold it all together until you have an even mixture.
  6. Use your hands to roll 9 1 inch balls.
TO FRY YOUR CHICKPEA FRITTERS
  1. Over high heat, heat your vegetable oil in your frying pan.
  2. Once hot, one by one place your fritters onto the pan.
  3. Fry them all until they are golden brown on the side that’s touching the pan—about 2 minutes. Then use your metal spatula to flip them and fry for another 2 minutes (until golden brown)
  4. Use your metal spatula to transfer your fritters to your paper towel lined plate to absorb any excess oil. Let sit for 2 minutes.
