Can’t deny a caramelized onion. Fierce! Every time it’s on anything, it’s EVERYTHING! You know that moment when you bite into a burger topped with caramelized onions, the first words out of your mouth after you close your eyes and chew a little longer and slower is “mmmm those caramelized onions though.” Well, here, they aren’t the topper, no, they are THE STAR!

Inviting friends over for wine and cheese. Hosting the Super Bowl. Throwing a party. This dip is always the right choice.

TO COOK DOWN YOUR ONIONS
  1. Over medium heat, melt down your butter.
  2. Add all of your onions and use your tongs to move them around to coat them in your butter.
  3. Sprinkle on your salt and sugar. Mix.
  4. Let your onions sit untouched and cook. Every couple of minutes, use your tongs to move your onions around and keep them from burning.
  5. 15 minutes in, pour half of your chardonnay over your onions. Let it sizzle. Then pour on the rest. Use your tongs to mix.
  6. Cook until browned—about 45 minutes. This part is boring af. If you’re making this for the Super Bowl or a party, you can absolutely work on other dishes while keeping a side eye on these.
  7. Use your tongs to transfer your onions to your cutting board. Roughly chop them and put them back in your frying pan.
TO MAKE YOUR DIP
  1. Mix your sour cream and cream cheese into your onions in your frying pan.
  2. Mix in your ponzu and your nutmeg.
  3. Season to taste with salt if needed.
