My go-to turkey burger of all time is my Caramelized Onion And Gorgonzola Turkey Burgers recipe. It’s insanely good! They’re rich, flavorful, and—for all of those people who hate the word, stop reading now—super moist. So sneaky me, I translated the recipe into turkey meatball form so that I can trick my family into eating it more often. You know THAT’S love!

FYI, pair them with a bucatini in a brown butter parsley sauce for a huge win!

CARAMELIZED ONION AND GORGONZOLA TURKEY MEATBALLS

TO MAKE YOUR ONIONS
  1. In your frying pan, over high heat, melt your butter together with your olive oil.
  2. When the oil is shimmering, add your chopped onions. Use your rubber spatula to move them around about every 3 minutes for the next 15 minutes. You are looking for them to be softened and slightly yellowed.
  3. Season them with salt.
  4. Let your onions cook for 15 minutes, stirring every few minutes. You want them to begin to brown and stick slightly to your pan.
  5. Pour your red wine over your onions. Mix until your onions are coated.
  6. Cook for 5 minutes.
  7. Transfer them to your medium mixing bowl.
  8. Refrigerate to room temperature—about 10 minutes.
TO PREP YOUR TURKEY BALLS
  1. In your mixing bowl, combine your ground turkey, egg, salt, pepper, caramelized onions, gorgonzola, breadcrumbs, and 1 tablespoon of parsley. Mix it all together until you have an even mixture.
  2. Use your hands to roll balls that are 2 inches in diameter. You can use an ice cream scoop or spoon to portion out the balls.
TO COOK YOUR TURKEY BALLS
  1. Preheat your oven to 350º.
  2. Coat your frying pan with it with your grape seed oil. Over high heat, heat it.
  3. Add in your turkey balls. (they should sizzle when they touch the frying pan. If they don't, your oil isn't hot enough. Give it a little more time to heat)
  4. Let your turkey balls sear—roughly 1 minute. Then, rotate them and allow them to sear on the another side for another 1 minute, and then a third side for another minute. (you know it's seared well if your turkey balls are browning where they touched the pan. The untouched parts will still look raw at this point.)
  5. Put your oven-safe frying pan filled with meatballs in the oven.
  6. Bake until your turkey balls hit 165º— about 10 minutes. (to test their temperature, stick your meat thermometer into the center of the ball).
  7. Sprinkle your remaining gorgonzola and parsley over the top of your turkey meatballs.
  8. Eat and enjoy!
