Ingredients

FOR THE GINGER TEA

Instructions

TO MAKE THE GINGER TEA
  1. Combine water, sliced ginger, peppercorns, and lemongrass in a large pot.
  2. Simmer on low for 30 minutes to extract the flavors.
  3. Mix in smoked honey until dissolved.
  4. Strain the tea and cool to room temperature before mixing into the cocktail.
TO PREPARE THE COCKTAIL
  1. In a large beverage dispenser or pitcher, combine 20 cups of cooled ginger tea,1 cup fresh lemon juice, 3 1/3 cups maple syrup, 5 cups fat-washed bourbon, and crushed sage leaves. Stir thoroughly to combine. Adjust sweetness or acidity if needed by tasting a small portion.
  2. Serve over ice in a rocks glass.
  3. Finish with a single sage leaf.
