BUFFALO SAUCE DEVILED EGGS

FOOTBALL. The perfect time to eat bar food

Let me start here. I like sports. Mostly playing them. Somehow I could not care less about watching the Super Bowl. I’m not even an ounce excited for the commercials or halftime show. Don’t count me out. You need people like me. People who love to cook, are happy to move in and out of the kitchen making endless delicious bites. THAT, that excites me.

Leading up to game day, I have loads of fun making easy but gluttonous recipes. Unlike most of my recipes, these are focused on assembly. If you’re not a cook but want to make some bites, these are the minimal-fuss recipes made for you.

BUFFALO SAUCE DEVILED EGGS

Ingredients

Instructions

TO BOIL YOUR EGGS
  1. Fill your stockpot with cold water.
  2. Add your eggs.
  3. Bring your water to a rolling boil and then remove your pot from the heat and cover it with a lid.
  4. Let your eggs sit for 11 minutes.
  5. If you’re using a sous vide, follow it’s instructions.
TO MAKE YOUR BUFFALO SAUCE EGG FILLING
  1. Melt your stick of butter in your sauce pan.
  2. Whisk in your hot sauce, vinegar, cayenne, garlic, and then salt to taste.
  3. Remove from heat and let cool to room temperature.
  4. Slowly cut all of your eggs in half and put all of the egg yolks in your empty mixing bowl.
  5. In your mixing bowl use your fork to break down your egg yolks into an even crumble.
  6. Use your rubber spatula to fold in your mayonnaise until you have an even mixture.
  7. Spoon in 9 tbsp of your buffalo sauce and mix until you have an even smooth mixture.
  8. Put your mixture into a piping bag.
TO ASSEMBLE YOUR DEVILED EGGS
  1. Cut just the tiniest piece off of the pointy part of your egg white off (the uncut side). This creates a base for your egg to sit on without rocking.
  2. In a spiraling fashion—like when you do a self-serve froyo—pipe your egg mixture into each egg white.
  3. OPTIONAL. Sprinkle a little extra cayenne over your deviled eggs.
