BANANA PUDDING

This is a small-batch banana pudding recipe for when you have a craving (or just a couple of bananas ripening too quickly that you have absolutely no idea what to do with). IT’S SO GOOD!

TO MAKE YOUR BANANA PUDDING
  1. In your small mixing bowl use your muddler to mash your bananas into a purée—this takes about 30 seconds. Set them aside.
  2. In your medium mixing bowl, whisk together your sugar, flour, and salt.
  3. Add your egg yolks and a 1/4 cup of milk. Whisk it all together. Set aside.
  4. Pour the remaining 3/4 cup of your milk into your saucepan. Over medium heat, whisking consistently, bring your milk to a simmer. Once simmering, remove it from heat.
  5. **Now it’s time to temper your eggs. Please follow the next steps closely or you will end up with scrambled eggs.
  6. While CONSTANTLY WHISKING your sugar mixture in your medium mixing bowl, VERY SLOWLY pour a steady stream of 1/3 of your simmered milk into it.
  7. Then very similarly, begin whisking your remaining milk in your saucepan and WHILE WHISKING pour your sugar mixture VERY SLOWLY in a steady stream into it.
  8. While still consistently whisking, turn your heat back on to medium. Whisk until your liquid thickens into a pudding—about 1 1/2 minutes.
  9. Remove from heat.
  10. Whisk your butter and vanilla into your pudding until your butter is fully dissolved.
  11. Pour your mashed bananas into your pudding and use your rubber spatula to gently fold them in until you have an even mixture.
  12. Eat either warm or refrigerate and enjoy them cold.
