BAKED SWEET POTATOES WITH TOASTED MARSHMALLOWS

SWEET POTATO CASSEROLE. Yes, the one with the marshmallows.

When it comes to a sweet potato casserole, I always feel the need to be the first one to dig into the baking dish and scoop up just a little more than is socially accessible—like the amount that people can rightfully give me side-eye for but not so much that they feel comfortable saying anything about it. It’s my favorite part of the holidays. With this year being very different and we and all of the small pod Thanksgiving meals happening, I came up with this idea. You see, I wanted to create a grab-able and not scoopably sharable version of this awesome casserole dish to make life a little more comfortable for all.

BAKED SWEET POTATOES WITH TOASTED MARSHMALLOWS

BAKED SWEET POTATOES WITH TOASTED MARSHMALLOWS

Ingredients

FOR THE SWEET POTATOES
FOR THE MAPLE SUGAR BUTTER

Instructions

TO BAKE YOUR SWEET POTATOES
  1. Preheat your oven to 425º.
  2. Stab the top of each potato with the tines of your fork 5 times each. It will be tough to both sink them in and pull them out—think sword in the stone. It’s worth it because it cuts the bake time down significantly.
  3. Use your hands to rub olive oil all over your sweet potatoes until they are fully coated and place them on your baking sheet.
  4. Bake until tender—50 minutes. You should be able to stick your fork into your sweet potato and pull it out with ease.
TO MAKE YOUR MAPLE SUGAR BUTTER
  1. In your mixing bowl, use your rubber spatula to mix together your butter, light brown sugar, maple syrup, and cinnamon until you have an even mixture.
TO STUFF YOUR SWEET POTATOES
  1. Use your chefs knife to cut your sweet potatoes three-quarters of the way through lengthwise.
  2. Use the side of your spatula to coat the now-exposed inside of your sweet potatoes with your maple sugar butter.
  3. Evenly divide your marshmallows among your sweet potatoes. Stuff them in the cavity you’ve just cut.
  4. Broil your marshmallow stuffed sweet potatoes on high until you see some blackening—2 minutes but check at about 1 1/2. Think s’mores. You want that combination of golden burn and blackened char on your marshmallows.
  5. Sprinkle your pecans over your marshmallows.
  6. Serve hot and enjoy.
