“MAN, AM I STUFFED” — Mushroom

As someone who loves to have people over and entertain them stomach first, I’m always looking to create small bites for everyone to nibble on at the kitchen counter with some wine while I finish off the main meal (gotta make sure it’s hot when they eat it). Now, with Thanksgiving right around the corner, I got to thinking about the bites at my family’s gatherings—it’s an understatement to say that my aunt cooks up a storm. That said, my grandpa likes to make and bring something and that something is often his stuffed mushrooms. I have no idea what’s in them but it inspired me to make my own. In my ongoing effort to make ground turkey more appealing—see my Turkey Chili and Apple Turkey Meatballs—this recipe came to be!

GROUND TURKEY STUFFED MUSHROOMS

TO PREP YOUR MUSHROOMS
  1. Preheat your oven to 325º.
  2. Separate the stems from the caps. Don’t discard them.
  3. Put your mushroom caps into your mixing bowl.
  4. Coat them with a tablespoon of olive oil.
  5. Season with salt and pepper.
  6. Set aside.
  7. Finely chop the stems of your mushrooms.
  8. Set aside separately from the caps.
TO MAKE YOUR GROUND TURKEY STUFFING
  1. In your frying pan over high heat, heat a table spoon of olive oil.
  2. Add your garlic and chopped up mushrooms. Cook for 3 minutes to pull out the flavors. Make sure to stir it consistently to keep it from burning.
  3. Add your ground turkey. Break it up into tiny pieces using your spatula.
  4. Cook until your turkey is fully cooked and browning on the edges—about 10 minutes.
  5. Add the thyme and chives.
  6. Season to taste with onion powder, smoked paprika, salt, and pepper.
  7. Mix in the panko.
  8. Mix in the mascarpone.
  9. Remove from heat. Let cool until you can touch it without it burning your hand.
PUT IT ALL TOGETHER
  1. Use a fork to overstuff each of your mushroom caps.
  2. Place each stuffed mushroom into your baking dish. They should be pressed against each other.
  3. Bake for 50 minutes.
  4. Garnish with parmesan, thyme, and chive.
