SAVORY BREAKFAST TACOS

As a kid, who am I kidding, as an adult I love breakfast so much that I'll eat it any meal of the day. That got me to thinking about how I could make breakfast food feel more dinner-y. Well, step one was making it savory. Ooh, a savory pancake! Yes! Ok. From there, all of the pieces fell into place—eggs, scallions, ground beef, corn. Ugh, it's so easy to make and so delicious. Thanks to this recipe, Taco Tuesday will forever be celebrated right!
