TURKEY BOLOGNESE

NOT YOUR GRANDMA’S BOLOGNESE unless your grandma also adds booze into hers. In which case, respect.

Ok, I’ve tested this recipe three times now. Eeep, “tested” is the wrong word because I’ve changed absolutely nothing each time. I’ve made it three times because it kept getting demolished before I had a chance to photograph it (ahem, talk to my husband for the hold up on this recipe, HA!). That’s to say, this bolognese is crazy awesome and even better, it’s really easy to make. I will say, it takes a little bit of standing and on occasion mixing, but a glass of wine in hand makes that process a lot nicer. Enjoy!

TO MAKE YOUR BOLOGNESE
  1. Over medium high heat, coat your frying pan with a thin layer of olive oil.
  2. To test if your oil is hot enough, drop one piece onion on it and if it sizzles, your oil is ready. If it doesn’t, leave that onion in the oil and once it starts to sizzle, your oil is ready.
  3. Once your oil is hot, add your onions and garlic. Use your spatula to constantly move them around until they are softened—about 3 minutes.
  4. Use your hands to break chunks of your ground turkey off and drop them into your frying pan. Use your spatula to break down the chunks even further. You are looking for an evenly sized crumble here.
  5. Season turkey with your salt and pepper.
  6. Let cook, mixing regularly (but not constantly) until you see a golden brown appear on a lot of the edges—about 15 minutes. Add the following ingredients in along the way:
  7. 5 minutes in: sprinkle on your cilantro.
  8. 10 minutes in: pour your Taylor Fladgate 20 over your turkey.
  9. Once your turkey is browned, mix in your tomato sauce and cook for another 5 minutes.

Notes

This recipe is just for the bolognese sauce. If you'd like it served over pasta, I highly recommend making your pasta at the same time as this sauce. The first step is to fill your stock pot with water, turn on your heat and then dive into this recipe while your water heats to a boil. Follow the instructions on your pasta box/bag from there.
