GROUND BEEF DINNER … the homey recipe you need.

Now, with Jamaican in-laws, I am no stranger to rice and peas. My mother-in-law makes it perfectly. So, to keep that Jamaican love in my home, I made my own version that turns a side dish into a main—it’s a star! Bonus, my kids love it. Sooo, I’m going to add this recipe to my Recipes For Kids section for ya! BUT don’t get it twisted, it’s a crowd-pleasing dish for all!

TO MAKE YOUR RICE
  1. Some rice packages vary on cook times. I am basing this off of the one I used that calls for a 45-minute cook time. If your packaging differs, follow the information on your rice's packaging.
  2. Over high heat, melt your butter down in your saucepan. Add your diced onion and your tablespoon of thyme. Cook them down while moving consistently with your wooden spatula until your onions have softened and lightly yellowed—about 5 minutes. Transfer half of your onion mixture to your mixing bowl, set aside, and leave the rest in your saucepan.
  3. Add your rice to your remaining onion mixture. Mix.
  4. Quickly add your chicken stock and half of your can of red kidney beans.
  5. Season with salt and pepper. Mix. Bring to a rolling boil. Cover your saucepan with its lid. Turn your heat down to a simmer. Simmer for 45 minutes (or the timing according to your rice's packaging).
  6. Move on to cooking your meat at this point.
  7. Remove from heat and let sit covered for 10 minutes.
  8. Mix.
TO COOK YOUR GROUND BEEF
  1. Over high heat, heat your oil in your frying pan. If you drop a small piece of ground beef on it it should immediately sizzle, if it doesn't your oil isn't ready just yet.
  2. Add your ground beef in chunks. Use your wooden spatula to break up your beef into a crumble.
  3. Season your meat with your garlic powder, onion powder, salt, and pepper. Mix in your remaining onions, thyme, and red kidney beans.
  4. Let your beef sit untouched for a few minutes at a time and then mix and allow it to sit again (this is how you get browning on your meat, giving it a deeper, more delicious flavor). Cook until you have some browning on the bottom and all of your pink is gone—about 10 minutes.
  5. Remove from heat. Pour your rice over your beef and use your wooden spatula to fold it all together.
  6. Sprinkle your extra thyme on top.
  7. Serve hot. Eat and enjoy!
