Make them for a crowd, make them for a more intimate dinner date, or make them as an upscale bite with the kiddos in mind—they are always on point!

PAPPARDELLE PIZZA PINWHEELS

PAPPARDELLE PIZZA PINWHEELS

TO MAKE YOUR PAPPARDELLE
  1. Over high heat, bring a stockpot of salted water to a boil.
  2. When it's boiling, cook your pappardelle to package instructions (mine took 3 minutes).
  3. Drain your pappardelle in your strainer.
TO MAKE YOUR PIZZA FILLING
  1. Use your same stock pot. Over medium-high heat, melt your butter.
  2. Add garlic, basil, and 3/4 of your rosemary. Use your wooden spoon to move them around until they have softened—about 2 minutes.
  3. Mx in your flour until it's fully integrated.
  4. Pour in your milk while mixing with your wooden spoon. Bring to a simmer.
  5. Add marinara sauce. Bring back to a simmer.
  6. Add 2 cups of shredded mozzarella (not packed). Mix until you have a smooth cheese sauce.
  7. Season to taste with salt and pepper as you see fit.
  8. Mix in your pappardelle until it is fully and evenly coated in your pizza sauce. It will be a sticky mess. Don't worry, it's perfect!
TO MAKE YOUR PAPPARDELLE PIZZA PINWHEELS
  1. Preheat your oven to 350º.
  2. Grease your mini muffin baking pan with your oil cooking spray.
  3. Place one long pappardelle at a time on your cutting board. Use your fingers to roll it from one end to the other. If you want to make it thicker, roll an additional piece around the first. Stick your pinwheel in an individual cup in your muffin pan. Repeat this process until all of your muffin tin cups are full.
  4. Sprinkle your remaining shredded mozzarella and rosemary over your pinwheels. Use a paper towel to clean the spaces between the cups on the muffin tin. Any excess cheese can burn.
  5. Bake for 20 minutes. Then broil on high for 2 minutes.
  6. Insert a butter knife between the side of your pinwheel and the inner wall of the muffin tin cup. Pull the knife around your pinwheel to help seamlessly dislodge it. Use your knife for leverage to lift it out easily.
  7. Serve. Eat. Enjoy.
