WHAT TO MAKE WITH OVERLY RIPENED BANANAS? This.

Make these like I did OR make them your own! If you’re feeling for chocolate chips or chunks, walnuts, raisins, I don’t know, whatever you can think of, just toss them into your finished batter and mix them in evenly before pouring it all into your baking dish. I wouldn’t exceed a cup of mix-ins or your bars may lose their structure. And, on an IMPORTANT NOTE, you should check any bars that don’t have fruit in them at around the 25-30 minute mark versus the 45 minute mark. They will bake faster.

These are a great grab-and-go snack to have on hand. They’re also great if you’re trying to figure out what to do with your overly-ripened bananas and aren’t in the mood for banana bread.

TO MAKE YOUR OATMEAL BANANA BARS
  1. Preheat your oven to 350º.
  2. In your stand mixer over medium speed, cream together your light brown sugar and butter.
  3. Add in your bananas and continue mixing.
  4. Add your egg and continue mixing. Your mixture will look broken, not smooth. Don’t worry, you’re doing everything perfectly!
  5. Add your cinnamon and vanilla and mix.
  6. Stop your mixer. Add in your oats, flour, and baking soda. Over low speed, mix it all together until you have an even mixture—for roughly 1 minute.
  7. Line your baking dish with parchment paper.
  8. Pour your mixture in your baking dish and use your spatula to spread it so it’s even.
  9. Place your fig slices so that you have 4 evenly distributed rows of 4 fig slices. In case it’s a better visual, you want a fig slice in the center of each 2 inch square bar that you will ultimately be cutting out.
  10. Bake for until your batter has fully settled. You don’t want any visible wetness when you take it out—about 45 minutes. To note. If you are making these without the figs or any added fruit, it will cook faster so check it closer to 25 minutes in.
  11. Remove from the oven and let cool to room temperature—about 30 minutes.
  12. Transfer your banana bar loaf of sorts to your cutting board and cut it into 2 inch squares.
  13. Eat your bars and enjoy!
