MAPLE SWEET POTATO BANANA BREAD

BANANA BREAD FOR THE SOUL this is the perfect banana bread for the colder months.

PRO-TIP.

Don’t have overly-ripe bananas? Make them! Bake your bananas in their peels at 250º for 25 minutes. They will be blackened, juicy, and perfect for this banana bread.

WHY I LOVE THIS LOAF.

I made this loaf in the dead of summer and all I could think about is how perfect it would be for Fall and more specifically for Thanksgiving. I’ve already bookmarked it for making for my family for this year’s Thanksgiving (that said, I am surely going to make it again before the cold weather comes—SO GOOD)!

The maple, sweet potato, cinnamon, and nutmeg combination make this loaf extra special—it has a homey warmth to it. Kinda like food for the soul.

TO PREP YOUR SWEET POTATO
  1. Fill your sauce pan with water roughly an inch and a half from the top. Liberally sprinkle salt into your water and cover your saucepan with its lid.
  2. Bring to a rolling boil.
  3. Add your cut sweet potato.
  4. Boil until your sweet potato pieces are extra soft. You should be able to stick a knife of any sort into them with ease and also be able to pull it out without any tension. We are over-boiling your potatoes a little here.
  5. Transfer the boiled potato pieces into your small mixing bowl. Use the backside of a fork to mash them down.
  6. Add your cinnamon, nutmeg, and walnuts into your mashed sweet potato. Use your rubber spatula to fold it all together until you have an even mixture.
TO MAKE YOUR BANANA BREAD
  1. Preheat your oven to 350°.
  2. In your stand mixer, cream together your butter and sugar—about 2 minutes.
  3. Add your banana chunks. Mix them. This won’t look smooth and even, it will actually look a bit broken. It will continue to look like that until you add your flour. Don’t worry, you’re still on track!
  4. Add your sweet potato mixture and continue to mix.
  5. Add your eggs. Mix them in fully.
  6. Add your flour and baking soda and mix them in fully. Now, your mixture should look smooth and even.
  7. Grease your loaf pan with your butter spray.
  8. Pour your batter into your loaf pan.
  9. Sprinkle your remaining 1 teaspoon of cinnamon evenly over your loaf.
  10. Bake until you can stick a toothpick into the center of the loaf and only crumbs (no uncooked batter) come out on it—about 1 hour and 35 minutes.
  11. Take your loaf out of the oven. While still in the loaf pan, use your silicone brush to evenly coat the top of your loaf with maple syrup.
  12. Let your banana bread cool in its pan until it's room temperature—about 30 minutes.
  13. Transfer it from your loaf pan to your cutting board, slice it, and eat at least one slice asap! Happy eating!
