VEGETARIAN PASTA night for the win.

There’s a time when we all go to pasta to satiate our craving for a warm heavy comforting food. This is not that dish. As much as a pasta can be, this dish is light, is filled with fresh green flavors, and will fill you without stuffing you.

When it comes to the kiddos, all I can say is that both my five-year-old and my two-year-old ate till their bowls were clean. Mom win for showing them that eating greens is awesome.

TO MAKE YOUR PASTA AND CHICKPEAS
  1. Boil your pasta according to the instructions on its packaging for al dente.
  2. In the meantime, strain your chickpeas in a strainer in your sink. Rinse them and then leave them there.
  3. Move on to making your sauce while your pasta is cooking.
  4. Strain your pasta over your chickpeas in your strainer.
TO MAKE YOUR GREEN GODDESS PASTA SAUCE
  1. In your food processor, combine your basil, dill, spinach, avocado, garlic, parmesan cheese, milk, and extra virgin olive oil. Blend till you have an even saucy texture. Add more oil if you feel it needs a little thinning out. Season to taste with salt and pepper.
  2. Transfer your pasta and chickpeas back to your now empty stock pot. Add your green goddess sauce. Mix it all together over low heat until warm.
  3. Serve. Eat. Enjoy.
