This sexy side dish is such a crowd-pleaser. Yeah, I just called potatoes “sexy”, I mean, look at those colors! I don’t know about you but I just want to dig right into them—to be fair, I did and I’m telling you that from my first-hand experience, you are going to want to too. If you’re hosting friends or family, these are an easy dish to have going in your oven while you’re making, say my Halibut With Lemon Garlic And Herb Butter Sauce. Mmmm, what a delicious combo that I’m for sure going to toss together in the very near future. Take your dinner to the next level with these humble super sexy potatoes.

TO BAKE YOUR POTATOES
  1. Preheat your oven to 400°.
  2. In your mixing bowl, season your potatoes with salt and pepper. Coat with 1 tablespoon of olive oil. Sprinkle your rosemary, sage, thyme, dill, and basil over your potatoes. Mix it all until your potatoes are evenly coated.
  3. Spread the potatoes in an even layer on your baking sheet.
  4. Bake until fully tender when poked with a knife—about 25 minutes.
  5. Let the potatoes cool enough so that you can handle them, then crush each one with the back of your measuring cup. You want to create a patty shape, with lots of craggy surface area to crisp up in the hot oil. If you have larger potatoes, tear them up into smaller pieces after smashing.
  6. Drizzle another tbsp of oil over potatoes and place them back in the oven at 450º for 15 minutes.
  7. Season to taste with finishing salt.
  8. Serve. Eat. Enjoy!
