APPLE PICKING? Pick up some cider doughnuts to-go while you’re there.

I LOVE APPLE PICKING SEASON! I kind of see it as a really fun day followed by and Iron Chef challenge where the secret ingredient is apples with the extra challenge of what to make with all of them. But that’s not all that I love. With apple picking day comes cider doughnuts—it’s a must! Well, my friend went and grabbed me some. I was expecting one or two but there it was a glorious bag of six. Well, we ate two and then I had this brilliant idea, the rest you can see in the pictures. It’s crispy and gooey and makes for the perfect sweet Fall brunch. You’ve gotta try this one!

TO PREP YOUR DOUGHNUTS
  1. Grease the inside of your cake pan with butter spray.
  2. Place your doughnut quarters in a circular pattern working from the outside in. They should be firmly touching but not jammed together—like, don’t mush one in just to get it to fit.
TO PREP YOUR FRENCH TOAST CASSEROLE
  1. In your mixing bowl, fully whisk your eggs.
  2. Add your almond milk and vanilla. Whisk.
  3. Add sugar. Whisk fully.
  4. Pour your liquid mixture evenly over your doughnuts. You will see your doughnuts start pulling up the liquid.
  5. Cover your cake pan with tin foil.
  6. Refrigerate for 1 hour.
TO BAKE YOUR FRENCH TOAST CASSEROLE.
  1. Preheat your oven to 350º.
  2. Bake for 30 minutes.
  3. Remove your casserole from your cake pan and transfer it to a plate.
  4. Sift confectioners sugar over it.
  5. Serve with maple syrup.
