THE DEVIL(ED) IS IN THE DETAILS, and, in this case, those “details” are candied bacon!

Whether you’re hosting friends for brunch or putting together special Super Bowl bites, these deviled eggs are a hands down must! Have I sold you? Well, if you’re a believer in the idea that Candied Bacon makes everything better, these sell themselves.

TO HARD BOIL YOUR EGGS
  1. Fill your pot with just enough cold water so that it sits 1 inch higher than your eggs.
  2. Add all of your eggs. Cover the pot with its lid. Heat on high until it gets to a rolling boil.
  3. Take the pot off of the heat and remove its lid. Let it sit for 12 minutes.
  4. Fill your large mixing bowl with cold water and all of your ice.
  5. Transfer your eggs to the ice bath. Let them sit there for 5 minutes.
  6. Peel your eggs.
  7. On your cutting board, use your chefs knife to cut them in half directly across the middle of the egg widthwise. Transfer all of the egg yolks into your medium mixing bowl.
  8. Rinse your egg whites to remove any excess yolk that remains on them.
  9. Cut the tiniest piece of the egg white off of the bottom of your egg to turn it from rounded to flat. This will keep your deviled eggs standing upright.
TO MAKE YOUR YOLK FILLING
  1. Hold your sieve over your other medium mixing bowl. In batches, use your butter knife (or spatula) to press your egg yolk through it. This smoothes it nicely for a more refined finished deviled egg.
  2. Add your mayonnaise to your desired texture (I used 3 tablespoons). Then season to taste with your smoked paprika, salt, and pepper.
TO ASSEMBLE YOUR DEVILED EGGS
  1. Put your yolk mixture in your piping bag with the star tip at the end.
  2. In a spiral motion—like you’d use to put froyo in a cup—fill all of your egg halves with your yolk mixture.
  3. Stick a piece of candied bacon in each deviled egg.
  4. Serve. Eat. Enjoy!
