These ooey-gooey breakfast bars are perfect for that grab-and-go morning moment. Whether you’re about to hop on a zoom call, your kids need a bite before school, or you’re hosting guests and want to have something special waiting for them in the morning before they hit the road, these are the bars to make. They are fluffy, gooey, sweet but not too sweet, and very delicious. Everyone who has one will be thanking you profusely for them.

TO MAKE YOUR BANANA BARS
  1. Preheat your oven to 350°.
  2. In your mixing bowl, use the back of your fork to mash down your bananas.
  3. Add your sugar and mix until fully incorporated.
  4. Add eggs, vanilla extract, and maple syrup. Mix.
  5. Add your flour, oats, baking soda, and cinnamon. Mix them in fully.
  6. Line your sheet pan with your Silpat. Pour your batter into it. Use your spatula to make sure it is evenly spread.
  7. Bake until you have a light golden color and can stick a toothpick into the center of the sheet cake and only crumbs (no uncooked batter) come out on it—about 25 minutes.
  8. Carefully not to burn yourself, transfer your loaf to one of your cutting boards. I placed the cutting board on top of the sheet pan, held it tightly, and flipped it. Then, I lined my second baking sheet with wax paper, sandwiched what is currently a sheet cake in between the two cutting boards, and flipped it again so that it is right side up.
  9. Let cool to room temperature before cutting—about 30 minutes.
  10. Cut into your desired bar shapes and sizes.
